Ingredients: rice flour, natural sweeteners (xylitol, erythritol, inulin), corn starch, fibre (bamboo fibre, psyllium seed husks) potato protein, tapioca starch, coconut oil (nut), stabiliser: (guar gum), Himalaya salt, raising agent (sodium bicarbonate).
- 6 eggs or egg substitute

250 g cake Mix
Baking temperature: 180°C
Baking time: 8-10 minutes (needle test)
- Separate the eggs, then add the water and the light sponge base powder to the yolks and mix thoroughly.
- Beat the egg whites hard. Loosen with half of the beaten egg whites, i.e. stir the base until lump-free and then loosen further with the remaining beaten egg whites.
- Pour the dough into a cake tin or spread it on baking paper to make sheets. Bake in a preheated oven until done and test with a needle.
